TYPES OF ICE CREAM

First off, for a frozen treat to be qualified as ice cream, the mixture used to make the ice cream must be no less than 10% milkfat. The higher the fat, the creamier the texture.

Sorbet isn’t technically ice cream. Sorbet is its own category, we’re considering it loosely related to ice cream. Plus, we really wanted to share sorbet recipes. You can make sorbet in the Cuisinart Ice Cream Maker.

There are several types of ice cream but we’re going to cover the ones we use to make Cuisinart Ice Cream Maker Recipes.

Custard Based – Traditionally, many ice cream recipes begin with an egg custard. Custard based ice cream uses a combination of milk, cream, eggs, and sugar, and is first cooked then frozen. We have the perfect recipe for custard ice cream.

HOW TO MAKE ICE CREAM IN AN ICE CREAM MAKER?

Because ice cream makers can vary from model to model, it’s best to follow the manufacturer’s directions when making ice cream in a Cuisinart ice cream maker.

HOW LONG DOES ICE CREAM LAST?

Unopened store bought ice cream lasts 2-3 months. Homemade Cuisinart Ice Cream Maker recipes stays good for 2-3 weeks, depending on the ice cream flavor.

When in doubt, if it looks bad or icy, throw it out.

HOW LONG IS ICE CREAM GOOD FOR IN THE FREEZER?

Ice cream stays good for 2-3 months if unopened. Once it’s open, it lasts for 3-4 weeks.

WHAT IS A PINT OF ICE CREAM?

A pint is a US measurement of volume. One liquid pint equals 16 fluid ounces. One pint of ice cream is 16 fluid ounces of ice cream.

HOW BIG IS A PINT OF ICE CREAM?

There are approximately 16 fluid ounces in a pint of ice cream, which is about 2 cups. I prefer to use the volume measurements vs. weight measurements when I’m measuring a pint of ice cream.

It drives us batty when ice cream shops post prices for a pint, which is a volume measurement, but weigh the ice cream on a scale as if it’s a weight measurement.

Volume and weight are different! Rant over.

HOW DO I SCOOP HARD ICE CREAM?

There are a couple of methods for scooping hard ice cream. First, you can allow the ice cream to sit at room temperature for 15-20 minutes before scooping. You can also use a heated ice cream scooper. We prefer to set a metal ice cream scooper in hot water for 5 minutes, dry the ice cream scoop, and use it to scoop ice cream.

Cuisinart Ice Cream Maker Recipes

Ice Cream From Scratch
Ice cream base for Cuisinart Ice Cream Maker Recipes. We like to use this ice cream recipe as a base, and add our favorite add-ins to mix up the flavors.

Ingredients
  

  • 4 large egg yolks
  • ½ cup granulated sugar
  • 1 ½ cups whole milk
  • 1 ½ cups heavy cream
  • 1 teaspoon vanilla extract

Instructions
 

  • Chill the Cuisinart ice cream bowl for at least 24 hours or until solid. You should not hear any water sloshing around when you shake the bowl.
  • In a medium bowl, whisk together the egg yolks and granulated sugar until smooth and pale yellow in color.
  • Add the milk to a saucepan over medium heat. Bring the milk to a simmer and then remove from the heat. Be sure not to boil.
  • Add about ½ cup of the hot milk to the egg and sugar mixture and whisk constantly until combined.
    Then, add the tempered egg mixture back into the saucepan with the remaining hot milk.
  • Heat the saucepan on low. Stirring constantly, heat until the base has thickened enough to coat the back of a spoon. This should take a few minutes.
  • Strain the mixture into a bowl to remove any pieces of egg that may have cooked.
  • Add the heavy cream and vanilla extract and stir to combine.
  • Cover the bowl with plastic wrap making sure to have the plastic wrap touching the surface of the ice cream base. This will help keep it from forming a skin while chilling. Refrigerate for at least 3 hours.
  • Churn the ice cream mixture in the bowl of your ice cream machine according to the Cuisinart manufacturer’s instructions (mine took about 20 minutes), until it is thick and the consistency of soft-serve ice cream.
  • In the last two minutes, add your add-ins and flavors, and churn until they are evenly distributed.
  • Spoon the ice cream into a shallow container or a loaf pan. Press plastic wrap or wax paper to the surface of the ice cream. Freeze for at least 4 hours, or until solid. Let sit at room temperature for about 5 minutes before serving.

Notes

Use quality ingredients – When making homemade ice cream, you’ll want to make sure you are using high quality ingredients for the best outcome.
Chill out – If possible, always start with chilled ingredients. This is important for homemade no-churn ice cream recipes and ice cream maker recipes.
Don’t skimp on the fat – High fat milks and creams are essential when making homemade ice cream. Opting for a low-fat option often leads to icy ice creams and inconsistency in the texture.
Don’t go crazy with the add-ins – If you’re adding in additional ingredients, pick one or two and make sure they are chopped into small pieces.
Don’t skimp on the sugar – Sugar not only adds sweetness to homemade ice creams, it also helps with the texture. Sugar is essential for the creamy texture in ice cream.

  1. I just got a Dash “My Pint” ice cream maker. Im finding that 1/4 of a Cuisinart recipe is the perfect size for the 1 cup measurement needed to make ice cream in this.

    I wish you had included dairy free recipes. Your recipe looks like you are thinning out the heavy cream with milk. So, most likely, coconut milk would work. Coconut cream alone would be too thick.

    1. Yes, you can use Splenda in place of sugar. The ice cream may no be as creamy in recipes that use milk and sugar for the base. I recommend sticking to ice cream recipes that use egg yolks in the base, to help it stay creamy. I hope that helps.

  2. I just recently was given the Cuisinart Ice Cream Maker to replace my old style ice cream maker when the motor burnt out. Anyways… I’m trying to make White Chocolate Ice Cream (no egg recipe) for Easter. I’ve made 3 batches & done are what I’m looking for. Batch 1 – 2 cups heavy cream, 2 cups white chocolate creamer, 1 cup white chocolate syrup … too soft, too sweet, after being in freezer … turned gummy and then started to separate. (determined not enough fat). Batch 2 – 3 cups heavy cream, 1 cup half & half, 1 cup white chocolate syrup … not bad texture (still too soft for my liking, but tolerable), but just tasted like vanilla ice cream. Batch 3 – 2 cups heavy cream, 1 can sweetened condensed milk, 16 oz melted white chocolate chips… yuck! way too soft (runny/gummy), way too sweet, gritty/chunky texture (chip bits must have reformed…ugh). Does anyone have a good White Chocolate Ice Cream Recipe (with no eggs)? PLEASE HELP!! 🙂

    1. Hi Christie,
      White chocolate flavor usually comes from using cocoa butter. They also make white chocolate extracts. One idea is to start with a regular base of 2 cups of heavy cream, 1 cup whole milk, and 3/4 cup to 1 cup of sugar, then add in the white chocolate extract. Mix it, then poor it into your ice cream maker bowl. You could also chop up cocoa butter and add it during the last 5 minutes of churning.

      Remember to let your bowl freeze overnight to make sure it’s completely frozen before using.

  3. Hi, I always end up with a layer of ice cream on the walls and base of the bowl, is this normal?

      It’s pretty common for ice cream to stick to the walls and the bottom of the ice cream maker bowl. One thing that we like to do, let the bowl sit for a couple minutes, and then take a rubber spatula and scrape down the sides. We don’t typically get clumps doing it this way, as it all freezes together.

  4. I have a 1.5 Quart Ice Cream Maker. The instruction and recipe booklet got ice cream mixture on a few pages and then stuck together. I finally got the pages to separate but in doing so I lost the recipe for Simple Vanilla Ice Cream and part of the Simple Chocolate Ice Cream.

    Your website does not show a recipe for Simple Vanilla Ice Cream. Can you print it?

  6. Do you have some sorbet, ice cream or gelato recipes replacing sugar with Monkfruit sweetener, Grade A Maple syrup, honey or Agave nectar?

      You can use honey in most of our recipes, in place of sugar. We also have sugar free ice cream recipe that is going live around the 15th of June, that uses powdered sweetener.
