Honey – Honey adds natural sweetness and gives the final ice cream a slightly softer texture.
Vanilla Extract – To flavor our ice cream base, a good quality pure vanilla extract is key.
Kosher Salt – A bit of salt balances the sweetness in this recipe.
Rainbow Sprinkles – Your best choice is to use rainbow jimmies here (the longer style). The look amazing, plus they are less likely to bleed colors into the ice cream. I’ve found that non-pareils muddy the ice cream because all of their colors bleed and combine.

How to Make Sprinkles Ice Cream
- In a large bowl, mix together than heavy cream and whole milk.
- Add granulated sugar, honey, vanilla extract, and kosher salt. Whisk together for 2-3 minutes until the sugar is fully dissolved.
- Churn the ice cream mixture in the bowl of your ice cream machine according to your manufacturer’s instructions, until it is thick and the consistency of soft serve ice cream.
- In the last two minutes of the churn, add 1/3 cup of the rainbow sprinkles, reserving the rest.
- Spoon the ice cream into a shallow container or loaf pan. Sprinkle the remaining sprinkles over the top of the ice cream.
- Press plastic wrap or wax paper to the surface of the ice cream. Freeze for at least 4 hours, or until solid. Let sit at room temperature for about 5 minutes before serving.

Sprinkles Ice Cream
Learn to make Sprinkles ice cream from scratch with just a few simple ingredients. This Sprinkles Ice Cream is a Philadelphia style, churned ice cream.
Ingredients
- 2 cups heavy cream
- 1 cup whole milk
- 1/2 cup granulated sugar
- 1/4 cup honey
- 1 teaspoon vanilla extract
- 1/4 tsp kosher salt
- 1/2 cup rainbow sprinkles, divided
Instructions
- Chill the ice cream bowl for at least 24 hours or until solid. You should not hear any water sloshing around when you shake the bowl.
- In a large bowl, combine the heavy cream, whole milk, granulated sugar, honey, vanilla extract and kosher salt. Whisk for 2-3 minutes, until the sugar is dissolved into the mixture. You should not feel any grit if you rub the mixture together between two fingers.
- Churn the ice cream mixture in the bowl of your ice cream machine according to your manufacturer’s instructions (mine took about 25 minutes), until it is thick and the consistency of soft-serve ice cream.
- In the last two minutes of the churn, add ⅓ cup of the rainbow sprinkles, reserving the rest.
- Spoon the ice cream into a shallow container or a loaf pan.
- Sprinkle the remaining rainbow sprinkles over the top of the ice cream.
- Press plastic wrap or wax paper to the surface of the ice cream. Freeze for at least 4 hours, or until solid. Let sit at room temperature for about 5 minutes before serving.
Notes
- Your ice cream base and your ice cream maker bowl need to be very cold in order for the ice cream to churn correctly. If needed put the ice cream base in the freezer for an hour before churning.
- It is important that the granulated sugar dissolves into the milk. Ensure that there is no grittiness to your ice cream base before churning.
- Rainbow jimmies sprinkles work best in this recipe. The small round non-pareil sprinkles tend to bleed their colors into the ice cream and don't look as nice.
