For easy serving, you can freeze individual slices of the ice cream pizza. When you’re ready to serve, you can just bring out as many slices as you need.
If you are making this ice cream pizza more than 1 hour in advance, let it sit out at room temperature for about 10 minutes to soften.
Use your favorite toppings for this recipe. I love the sweetness that the white chocolate brings, but you could also use melted peanut butter, caramel sauce, or butterscotch.
You can use any ice cream flavor that you prefer. I love the simplicity of the vanilla ice cream on this ice cream pizza since it pairs so well with the sugar cookie, but get creative and use your favorite ice cream flavor and toppings!
You can use store-bought or homemade sugar cookie dough. Be sure to slightly underbake the cookie as it will get hard in the freezer. You want the edges to be crisp and golden and the center of the cookie to be chewy.
