Use ripe bananas that are very deep yellow. You do not want to use overly ripe bananas because they will fall apart in the brown sugar mixture while cooking.
The banana foster mixture will combine with the ice cream to flavor the overall ice cream to be a banana foster flavor. If you prefer, you can swirl the banana foster mixture into the ice cream base once it is in the loaf pan instead.
Make sure that the banana foster mixture is very cold before adding it to the ice cream base, which is why you should make it first. If it is warm at all, it will melt the ice cream base.
